A water softener removes hardness minerals until its resin is full, then "regenerates" by rinsing with salt brine. The grain capacity is how much hardness it can remove between regenerations. You want a unit big enough to regenerate about once a week at an efficient salt setting — frequent enough to keep the resin healthy, infrequent enough to save salt. Oversizing wastes salt and money; undersizing shortens the softener's life.
